Creamy Garlic Shrimp

When I am craving shrimp, this is my go-to recipe. This creamy garlic sauce mixed in with the shrimp is so flavorful. Just as good as the taste is the time it takes to prepare. It took me under 20 minutes to prepare this dish. Shrimp is so quick and easy to make! Even better is that it is fool proof to make. This recipe will soon become your weeknight favorite!

Let's talk shrimp

For this recipe, it is best if you get fresh shrimp from the seafood counter. Fresh always has the best flavor. If you are using frozen shrimp, it is important to let it defrost completely. 

It doesn’t matter what size of shrimp you get, but stay consistent with the size of shrimp you are using. You wouldn’t want to mix small and large shrimp together because the cooking time will vary and you might overcook or undercook some of them. 

When cooking this recipe, I left the tails on the shrimp and later removed them as I was about to eat them, but you can certainly remove the tails prior to cooking them if you prefer. 

Make sure to devein the shrimp prior to cooking them. I buy the shrimp that is ready to cook and de-veined already. That saves a lot of time when making this recipe. 

Shrimp takes so quick to cook! Add the shrimp to hot olive oil and let it cook about 2 minutes on each side. If the shrimp doesn’t sizzle when you first put them in the pan, then wait until the oil heats up a little longer. When cooking, you will see the shrimp’s gray color soon turn pink. You will know when the shrimp is done cooking when the body turns from a translucent color to  opaque. The tails will be bright red and the shrimp will form more of an O shape rather than a U shape.

The substitutions

  • Chicken Broth ↔ Wine
        • Instead of chicken broth, you may use dry white wine. I didn’t have any broth in my cupboard, so I used a white wine such as chardonnay
  • Heavy Cream ↔ Half and Half
        • You can use half and half or reduced light cream instead of heavy cream

Make it a complete meal

With this creamy garlic goodness, you are going to want to make it a complete meal. Here are a few ideas of what you can pair it with.

  • Try putting your creamy garlic shrimp over a bed of pasta. I prefer angel hair pasta because the flavor won’t get lost in such a delicate noodle. It’s just my personal preference to not taste such a bulky carbohydrate like fettuccini when using this sauce.
  • If you are looking for a low carb meal, toss your shrimp with zucchini noodles or spaghetti squash.
  • Steam or bake some fresh vegetables and toss in the shrimp. Drizzle some of the leftover sauce on top to dress up those vegetables. 
  • Make cauliflower rice or risotto as a delicious pairing with the shrimp.

Creamy Garlic Shrimp

This creamy garlic shrimp is my new favorite weekday meal, easy to make in under 20 minutes and one of the most flavorful pasta dishes with so few ingredients.

Ingredients
  

  • 1 lb shrimp deveined, fresh
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp garlic minced
  • 1/2 cup white wine or chicken broth
  • 1/2 cup parmesan cheese grated
  • 1 1/2 cup heavy cream
  • 1 pinch salt
  • 1 pinch pepper
  • 1/8 cup fresh parsley finely chopped

Instructions
 

  • Drizzle olive oil in a pan and heat over medium-high heat.
  • Season shrimp with salt and pepper and place them in the hot pan. Cook on one side for 2 minutes. Flip over and cook for 2 minutes. Remove and set aside on separate dish.
  • Using the same pan that the shrimp cooked in, add in the butter to melt. Then add in garlic and cook for 30 seconds.
  • Pour in broth or wine into the same pan with garlic. Simmer for 5 minutes. Stir occasionally.
  • Stir in heavy cream and simmer on low for 5 minutes.
  • Stir in parmesan cheese and mix well. Cook for 2 minutes on low.
  • Mix in cooked shrimp and toss together with the parsley.
  • Spoon shrimp and sauce over pasta or vegetables. Enjoy!
